What is the benefit of calculating the "cumulative hazard function" - are there any examples of an applied example? e.g. what would it be used to do apart from plotting it?

The benefit as compared to what? I am unclear as to the question being asked.

I mean, given that it gets calculated, how do we then use it in further analysis apart from hazard plotting to check goodness of fit

You would use it to get the plot as mentioned. An alternative methodology is to get a distribution plot (i.e. a Weibull plot). With that you then infer a reliability function for the item... I prefer (and use) traditional probability plots to accomplish this. At the end of the day both methods will get you there.
